Ever wanted to make a traditional British dish, but been flummoxed by the instructions – or thwarted by the lack of a particular ingredient? Here's a few recipes to help you out!

Roux - photo-essay
"Roux is a cooked mixture of equal amounts of flour and fat – usually butter, although any edible fat could be used. It's used to thicken sauces and gravies, and is the basis for many classic sauces such as Béchamel and velouté. You can also use it to make a basic white sauce, to which you can add various additional flavourings, if desired, such as parsley, mustard, cheese, onion. etc." See Kay's photo-essay of how to make this fundamental sauce ingredient.
Sorpotel
"I think if I had known the ingredients I might never have tried this wonderful dish. Give it a try - you won't be disappointed. It is so succulent it melts in your mouth. It also has a bit of a spicy kick, which you would expect, it coming from Zanzibar." Ian Williamson takes us through the recipe for this spicy meat dish.
Stovies
Fit Aboot A Stoved Tattie? Mike Clark's recipe for stovies.
Suet and Suet-Free Dumplings
It's mid afternoon and the sky is dark grey. The rain hasn't let up, and it's cold as well as miserable. Fancy a salad, anyone? No way! Let's have some good old British stodge.
Tuna Fishcakes with Chutney Yoghurt Sauce
"Even my brother (who hates tuna) loved these. Great as an appetiser, or skip the peppers and the fish cakes make a great children's meal, particularly because you get to eat them with your fingers." Ian Williamson with a great twist on fishcakes!
White Chocolate Mousse
This is a delicious light dessert. It doesn't take long to make but does require a bit of skill, so it's probably not suitable for beginners.
White sauce
"White sauce is very easy to make but there are still people who are unsure of how to make it - otherwise supermarkets wouldn't sell so much of the packet mix stuff!" Kay explains how to make a simple white sauce, which can also be the basis of many flavoured sauces.
Yam Cashew Nut Loaf
Vegetarian recipe for yam cashew nut loaf.
Yorkshire Pudding
These are easy to make and tasty with any roast dinner.
